More updated tutorial than IndigoChills

Things you NEED (explained later):

Homebrew and Riivolution (duh)
WiiXplorer (NOT WiiExplorer)
SD Card (you probably already have one)
CIOS already installed if you want to extract files onto a USB drive

Assuming you know how to use the Homebrew channel and how to install/use homebrew, download WiiXplorer using this link

Extract and put into the 'apps' folder in your sd card.

Insert SD Card + Run Homebrew Channel and select WiiXplorer.

It should say mounting devices, then you will automatically be on the SD Card menu. Make a new folder by pressing + then selecting Make New Folder with A. Call that folder something like SMGFiles or SMG2Files.

On the top-left, highlight the SD Card and press A. Then select the Disc image. Press Refresh in the top right, the folders should look something like 0 and 1 e.t.c.

Select 1 Data, then files, then you should see folders like ObjectData, StageData e.t.c.

Now, to get started, you probably only need the ObjectData and StageData files. Press + on the folder you want then press copy. Go back onto the SD Card / USB menu and press + then Paste. Do this for each file you want.

Well Done! You successfully have the files needed to get started with hacking SMG1/2! Have fun!

You can also extract the main.dol if you want to get into ASM!

I found another way using CFG USB loader, but it's slightly more complicated. You will need to have a home brewed wii, CIOS installed, CFG USB loader installed, and on your pc you will need to have wii back up manager, and a way to extract the iso (I used wiimm's iso tools but have heard that dolphin works too). You then need to put your super mario galaxy or galaxy 2 disk in your wii, and then open CFG USB loader. You then go to the menu in CFG, and press the button that says download. This will install the WBFS to your USB, and you just have to wait for it to finish. You are now done on the wii, so exit CFG, turn off your wii, and bring the usb to your pc. Now, with your USB in your pc, drag the wbfs to wherever you want on your pc. Open Wii Backup Manager and select it, then choose the option to convert to iso. When that's done, open command prompt. Wiimms iso tools installs as commands that can be run through command prompt, with a complete list provided here https://wit.wiimm.de/wit/. You want to enter in "wit extract supermariogalaxymore.iso/supermariogalaxy.iso", of course without the quotation marks. It should then work for a bit, and you will then have a folder with all the files in the same location as your iso.

To be real though, CleanRip is probably the best option.

But why would someone do that?
They would do it because they are either having trouble with CleanRip, or find it easier to use WIT.
